Oven-Fried Catfish
Pre-heat oven to 450 degrees.
Line oven-safe metal pan with aluminum foil for easy cleanup. Spray the pan with a non-stick spray.
Place the lemon juice in a bowl.
Mix the dried seasonings together in a separate bowl.
Place the eggs in a separate bowl. Mix thoroughly with a fork or whisk.
Place the bread crumbs on a plate or dish.
Place the fish in the lemon juice. Shake off excess. Sprinkle the combined dry ingredients on to each individual piece of fish. Take each individual piece of fish and place in the egg wash. Then, coat the fish on both sides in the bread crumbs.
Place on the prepared cooking sheet.
Once all pieces are coated, place the pan in the oven.
Watch closely as the oven is up very high, and the pieces will cook in 8-10 minutes. This may vary based on your oven.
Remove the pan from the oven allow the fish to cool slightly.
